This lemon chicken recipe is great for entertaining while staying on track with my healthy eating 8 week challenge!
1/4 c olive oil.
9 cloves of garlic
1/3 c cooking wine
Zest from 2 lemons
2 TBS fresh lemon juice
1 teaspoon kosher salt
1 and 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Heat olive oil over medium heat. Add garlic and cook for 45 seconds.
Remove from heat.
Add cooking wine, lemon zest, lemon juice, salt, oregano and minced time.
Pour sauce in a baking dish. Add 4 chicken breast. Turn the chicken over so the sauce is on the top and bottom.
Bake at 400 for 30-40 minutes.
Remove from oven and cover with foil. Let rest for 10 minutes.
Serve with : 1/2 c brown rice (I like the microwaveable Trader Joe’s brown rice packets) and steamed asparagus.
